Spinach & Cheese Omelette

A quick and delicious Spinach & Cheese Omelette that comes together in just 15 minutes.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/2 onion, diced
  • 2 cups fresh spinach
  • 3 cage-free organic eggs
  • 1 slice havarti cheese
  • 1 tomato, sliced
  • Pinch sea salt
  • Pinch black pepper

Instructions

  1. Heat a nonstick fry pan over medium heat and add the olive oil.
  2. Sauté the diced onions and minced garlic until they become translucent, about 3 minutes.
  3. Add the fresh spinach and cook just until it wilts, around 2 minutes.
  4. Crack the eggs into a bowl, adding a pinch of sea salt and black pepper. Whisk them together and pour over the spinach mixture.
  5. After 1 minute, use a spatula to run around the edges of the omelette to prevent sticking.
  6. Once the egg begins to set, place the slice of cheese over one half and carefully fold it over.
  7. Cook for another minute, gently flipping the omelette and cooking for an additional 30 seconds.
  8. Serve immediately, garnished with the sliced tomatoes on the side.

Notes

For a different flavor profile, feel free to swap havarti for cheddar or feta cheese. Best enjoyed fresh but can be stored for up to 2 days in an airtight container.
