  • 1 teaspoon Salt
  • 2 cups Baby Spinach (finely chopped)
  • 1 cup Shredded Mozzarella Cheese (or Feta for a tangier flavor)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Combine the cottage cheese, olive oil, and egg (or flaxseed mixture for a vegan version) in a large mixing bowl.
  3. Whisk together the flour, baking powder, and salt in a separate bowl until well incorporated.
  4. Gradually add the dry ingredients to the wet ingredients. Mix gently until just combined.
  5. Fold in the finely chopped spinach and shredded mozzarella cheese until evenly distributed.
  6. Divide the dough into equal portions on a floured surface, shaping each into a bagel-like ring.
