  • 1 cup Cottage Cheese
  • 2 tablespoons Olive Oil
  • 1 large Egg
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 2 cups Baby Spinach, finely chopped
  • 1 cup Shredded Mozzarella Cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese, olive oil, and egg. Mix until smooth and creamy.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  5. Carefully fold in the finely chopped spinach and shredded mozzarella cheese until evenly distributed.
  6. Scoop out portions of the mixture and shape them into bagels.
  7. Place each bagel on the prepared baking sheet.
  8. Bake for 20 to 25 minutes, or until they are golden brown and firm to the touch.
  9. Allow them to cool slightly before serving.

Notes

For storing, keep in an airtight container at room temperature for up to 2 days, or freeze for longer storage. Reheat in the oven at 350°F (175°C) for about 10 minutes.
