Delicious flatbreads made with spinach and cottage cheese, perfect for any meal.

  • 1 cup Cottage Cheese
  • 2 tablespoons Olive Oil
  • 1 large Egg (or flaxseed mixture for vegan option)
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 2 cups Baby Spinach
  • 1 cup Shredded Mozzarella Cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cottage cheese, olive oil, and the egg (or flaxseed mixture).
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry mixture to the wet ingredients, stirring gently to combine without over-mixing.
  5. Fold in the chopped spinach and shredded mozzarella.
  6. Shape the dough into bagel-like forms and place them onto the prepared baking sheet.
  7. Bake for 20-25 minutes until golden brown and firm to the touch.
  8. Allow to cool slightly before serving.
