Delicious and wholesome egg muffins packed with fresh spinach, tangy feta, and flavorful sun-dried tomatoes, perfect for busy mornings.

Ingredients

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup whole milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.
  2. In a large bowl, whisk the eggs until they are light and frothy.
  3. Pour in the whole milk, followed by the salt and black pepper. Mix until well combined.
  4. Fold in the chopped spinach, crumbled feta cheese, chopped sun-dried tomatoes, and baking powder.
  5. Pour the mixture into the muffin tin, filling each cup about three-quarters full.
  6. Bake for 20-25 minutes, or until golden brown and set in the center.
  7. Allow to cool slightly before removing from the tin. Serve warm or at room temperature.

Notes

Feel free to substitute feta with goat cheese or add bell peppers for extra crunch.
