A delicious and wholesome breakfast combining creamy Greek yogurt and fresh strawberries in a decadent overnight oats recipe.

Ingredients

  • 1/2 cup plain Greek yogurt
  • 3 oz cream cheese, softened
  • 1 cup almond milk
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 cup old-fashioned oats
  • 1 tbsp chia seeds
  • 1/2 cup strawberries, diced
  • Pinch of salt
  • 1/2 cup strawberries, chopped
  • 1 tbsp pure maple syrup (for reduction)

Instructions

  1. In a mixing bowl, combine the softened cream cheese, Greek yogurt, almond milk, pure maple syrup, and vanilla extract. Use a whisk to mix until the mixture is smooth and creamy.
  2. Add the dry ingredients: oats, chia seeds, and a pinch of salt. Stir until completely combined.
  3. Gently fold in the diced strawberries, ensuring they’re evenly distributed throughout the mixture.
  4. Transfer the mixture to an airtight container and refrigerate overnight.
  5. To make the strawberry reduction, place the chopped strawberries and the extra maple syrup in a small saucepan over medium heat. Mash the softened strawberries with a fork and let it simmer for a few minutes until thickened.
  6. Remove from heat. You can mix this fruity reduction directly into the overnight oats or keep it stored separately until serving.
  7. To serve, spoon the overnight oats into a bowl and top with the freshly made strawberry reduction. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
