  • 2 cups jasmine rice
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli)
  • 1/2 cup coconut milk
  • 1 lime (juice and zest)
  • Salt and pepper to taste

Instructions

  1. Cook the jasmine rice according to package instructions. Fluff with a fork and set aside.
  2. In a large skillet over medium heat, add the chicken breast. Cook until golden brown and no longer pink in the center, about 5-7 minutes per side.
  3. Pour in the sweet chili sauce and stir, ensuring the chicken is fully glazed, about 3-5 minutes.
  4. Steam or sauté the mixed vegetables until tender yet vibrant.
  5. In a small bowl, mix together the coconut milk, lime juice, and lime zest.
  6. To assemble your bowl, layer jasmine rice first, then add the sweet chili chicken, mixed vegetables, and finish with a drizzle of the coconut lime sauce. Enjoy!
