Deliciously balanced sweet potato breakfast bowls topped with Greek yogurt, banana, and granola, perfect for a hearty and healthy morning meal.

Ingredients

  • 1 large sweet potato
  • 1/2 cup Greek yogurt
  • 1/4 cup granola
  • 1 banana
  • 1 tablespoon honey
  • Cinnamon to taste
  • Nuts or seeds (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the sweet potato and poke several holes in it using a fork.
  3. Place the sweet potato on a baking sheet and bake for about 45-60 minutes, or until tender.
  4. Once baked, let it cool for a few minutes before slicing open lengthwise.
  5. Fluff the insides of the sweet potato with a fork.
  6. Add Greek yogurt over the sweet potato, followed by granola, sliced banana, honey, and a dash of cinnamon.
  7. If desired, sprinkle some nuts or seeds on top. Enjoy!
