A colorful and nutritious dish that combines sweet potatoes, fresh oranges, and feta cheese for a delightful experience.

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 medium oranges, peeled, segmented, and cut into chunks
  • 2 cups baby spinach leaves
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large eggs
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh cilantro or parsley, chopped

Instructions

  1. Preheat your oven to 425°F and line a large sheet pan with parchment paper.
  2. Toss the diced sweet potatoes, red bell pepper, and red onion with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper until well-coated.
  3. Spread the seasoned vegetables in a single layer on the prepared sheet pan. Roast for 20 minutes, stirring halfway through.
  4. Remove the pan from the oven and gently stir in the orange segments and baby spinach until slightly wilted.
  5. Create 4 small wells in the vegetable mixture and crack an egg into each one, if desired.
  6. Return the pan to the oven and roast for an additional 8 to 10 minutes, or until the sweet potatoes are tender and the eggs are set to your liking.
  7. Sprinkle crumbled feta cheese and chopped fresh herbs over the hash. Serve warm and enjoy!

Notes

Customize with seasonal vegetables or your favorite greens. For a richer flavor, you can add chorizo or sausage.
