  • 4 boneless skinless chicken breasts (or thighs)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter (divided)
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley (chopped, plus extra for garnish)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • A pinch of cayenne pepper (optional)

Instructions

  1. Prepare the Chicken: Pat the chicken dry with paper towels. Generously season both sides with salt, black pepper, smoked paprika, garlic powder, and onion powder.
  2. Sear the Chicken: Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Add the chicken, cooking for 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.
  3. Sauté the Aromatics: Lower the heat to medium. In the same skillet, add the remaining butter and chopped onion. Cook for about 3-4 minutes until the onion softens. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  4. Create the Sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Add the heavy cream and Parmesan, stirring continuously until the sauce is smooth and thickened. Taste and adjust seasoning if needed.
  5. Simmer the Chicken: Return the chicken to the skillet and spoon the sauce over it. Let it simmer on low heat for 8-10 minutes until the chicken is fully cooked.
  6. Garnish and Serve: Finish off with a sprinkle of fresh parsley on top. Serve hot, accompanied by rolls, mashed potatoes, or steamed vegetables for a complete meal.

Notes

For a lighter version, use half-and-half instead of heavy cream, and vegetable broth for a non-meat option. Leftovers can be stored in the refrigerator for up to 3 days.
