A comforting fusion of tender chicken breasts topped with sautéed onions, mushrooms, and gooey mozzarella cheese, inspired by the iconic Texas Roadhouse.

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 medium yellow onion, sliced
  • 8 ounces mushrooms, sliced
  • 1/3 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Pat the chicken breasts dry. Season both sides generously with salt, black pepper, garlic powder, and smoked paprika.
  2. Heat a large skillet over medium-high heat. Add the olive oil and butter, letting them sizzle together.
  3. Carefully place the seasoned chicken breasts in the skillet. Sear for about 4-5 minutes on each side until they turn a lovely golden brown. Once browned, remove the chicken from the skillet and set it aside.
  4. In the same skillet, toss in the sliced onions and mushrooms. Sauté them for about 8-10 minutes until they’re soft and fragrant.
  5. Carefully pour in the chicken broth, making sure to scrape up any tasty browned bits stuck to the bottom of the pan.
  6. Return the seared chicken breasts to the skillet. Spoon the sautéed onions and mushrooms over each piece.
  7. Sprinkle the shredded mozzarella cheese evenly over the chicken.
  8. Cover the skillet, reduce the heat to low, and cook for an additional 5-7 minutes. You want the cheese to melt and ensure the chicken reaches an internal temperature of 165°F.
  9. For a pop of color, garnish with chopped parsley before serving hot.
