  • 6 eggs
  • 1 cup spinach, chopped
  • 1 cup tomatoes, diced
  • 1/2 cup cottage cheese (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a baking dish with olive oil to prevent sticking.
  3. Lay the flour tortillas in the dish, overlapping slightly if necessary to create a sturdy base.
  4. In a mixing bowl, whisk together the eggs with a pinch of salt and pepper until well combined.
