A delicious dish featuring seared salmon fillets in a rich garlic butter sauce with cherry tomatoes and fresh spinach, bringing a taste of Tuscany to your table.

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • Juice of 1 lemon
  • Fresh parsley, for garnish

Instructions

  1. Warm 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering.
  2. Pat the fillets dry and season both sides evenly with salt, pepper, and Italian seasoning.
  3. Place the salmon skin-side down in the skillet. Cook undisturbed for 4-5 minutes until the skin is golden and crisp.
  4. Carefully turn the fillets and cook an additional 3-4 minutes until the center is opaque but still moist. Remove the salmon to a plate and set aside.
  5. Reduce the heat to medium. Add 4 tablespoons of butter to the same skillet. Stir in the minced garlic and sauté for about 1 minute until fragrant.
  6. Toss in the halved cherry tomatoes and cook for 2-3 minutes until softened.
  7. Stir in the spinach and cook for 1-2 minutes until wilted.
  8. Return the salmon to the skillet. Squeeze lemon juice over the fillets and spoon garlic-butter sauce on top. Garnish with parsley before serving.
