A hearty soup combining Italian sausage, tender potatoes, and kale in a creamy, savory broth, perfect for comforting weeknight meals.

Ingredients

  • 1 pound Italian sausage
  • 4 large potatoes, diced
  • 1 bunch kale, chopped
  • 1/2 cup bacon bits
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat. Add the Italian sausage and cook, breaking it up, until browned and cooked through. Drain excess fat if necessary.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3–4 minutes.
  3. Stir in the diced potatoes, then pour in the chicken broth. Increase heat to bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 12–15 minutes.
  5. Add the chopped kale and bacon bits. Cook for another 5 minutes until kale is wilted.
  6. Lower heat, stir in the heavy cream, and season with salt and pepper. Heat gently until warmed through.
  7. Ladle into bowls and serve hot.

Notes

Garnish with olive oil, Parmesan, and red pepper flakes. Best served with crusty bread and a crisp white wine.
