  • Egg yolks
  • Lemon juice

Instructions

  1. Preheat your oven. Bake the frozen French fries according to the package instructions until they’re crispy and golden brown.
  2. Prepare the eggs while the fries are baking; poached eggs or fried works beautifully!
  3. Melt the butter in a saucepan and let it cool slightly. In a separate bowl, whisk together egg yolks, lemon juice, and a pinch of salt. Slowly drizzle in the melted butter while whisking continuously until the sauce is smooth and thickened.
