  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • Salt and pepper, to taste
  • 1/4 cup olive oil
  • 1/4 cup unsalted butter
  • 1/2 cup chicken broth
  • Juice of 2 lemons
  • 1/4 cup capers, rinsed
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts generously with salt and pepper. Dredge each piece in flour, shaking off any excess.
  2. In a large skillet, combine the olive oil and unsalted butter. Heat over medium-high until the butter is fully melted.
  3. Carefully add the chicken breasts to the skillet. Cook each side until golden brown—this should take about 3-4 minutes. Once cooked, remove the chicken and set it aside on a plate.
  4. In the same skillet, pour in the chicken broth. Add the freshly squeezed lemon juice and rinsed capers. Bring the mixture to a simmer, using a spatula to scrape off any browned bits from the bottom of the pan.
  5. Return the chicken to the skillet. Allow it to cook in the sauce for an additional 5 minutes, allowing the flavors to meld.
  6. Just before serving, sprinkle fresh chopped parsley on top. Serve immediately and savor every bite!
