A crispy, golden-brown chicken dish topped with gooey mozzarella and vibrant marinara sauce, perfect for a comforting family dinner.

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 cup Panko breadcrumbs
  • 1/2 cup Italian seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/4 cup olive oil, for frying
  • 2 cups marinara sauce, warmed
  • 8 oz fresh mozzarella cheese, sliced
  • 2 tablespoons fresh basil, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. Pound chicken to 1/2-inch thickness and season with salt and pepper.
  3. Set up a breading station with flour, eggs, and a breadcrumb mixture of Panko, Italian breadcrumbs, Parmesan, garlic powder, and oregano.
  4. Dredge each chicken breast in flour, then egg, and coat in the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium-high heat and fry chicken cutlets until golden brown, about 3-4 minutes per side.
  6. Transfer the browned cutlets to the baking dish, topping each with marinara sauce, mozzarella, and a sprinkle of Parmesan.
  7. Bake for 10-12 minutes until cheese is bubbly and chicken reaches 165°F (74°C).
  8. Garnish with fresh basil and serve immediately.

Notes

For extra crunch, double-dip the chicken in egg and breadcrumbs. Store leftovers in an airtight container for up to 3 days.
