Crisp around the edges and tender inside, these classic sugar cookies shaped like small cards are perfect for gifts and decorating fun.

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3 to 4 cups confectioners’ sugar
  • 3 tablespoons meringue powder
  • Water
  • Food coloring (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and line baking sheets.
  2. Whisk together flour, baking soda, and baking powder in a small bowl.
  3. Cream butter and sugar in a large bowl until smooth, then beat in the egg, vanilla, and almond extracts.
  4. Gradually add dry ingredients to wet mixture until cohesive dough forms, avoiding overmixing.
  5. Roll teaspoon-sized dough into balls, flatten with the bottom of a glass dipped in sugar, and place on cookie sheets.
  6. Bake for 8 to 10 minutes, until edges are lightly golden, then cool completely on wire racks.
  7. For icing, mix meringue powder with water and confectioners’ sugar until desired consistency, color as desired, and pipe decorations.

Notes

Store decorated cookies in an airtight container at room temperature for up to 5 days. Freeze undecorated cookies for longer storage.
