  • 2 eggs
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian herb mix
  • 2/3 cup pizza sauce
  • 3.5 ounces grated cheese (Gouda, Edam, or mozzarella)
  • 2 ounces pepperoni
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a blender, combine the cottage cheese, eggs, garlic powder, salt, black pepper, and Italian herb mix. Blend until you reach a smooth consistency.
  3. Line a baking sheet with parchment paper. Pour the mixture onto the sheet and spread it into a thin circle.
  4. Bake the flatbread for 30 minutes or until golden brown.
  5. Increase the oven temperature to 400°F (200°C).
  6. Spread the pizza sauce over the baked flatbread. Top with grated cheese and pepperoni.
  7. Bake for an additional 8-10 minutes until the cheese is melted and bubbly.
