A quick and satisfying breakfast burrito packed with caramelized onions and creamy cheddar cheese, perfect for busy mornings.

Ingredients

  • 2 large eggs
  • 1/4 cup shredded cheddar cheese
  • 1/2 medium onion, thinly sliced
  • 1 tbsp olive oil
  • 1 whole wheat tortilla
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add the sliced onions to the pan. Cook them until they are nicely caramelized, about 10 minutes, stirring occasionally to prevent burning.
  3. While the onions are cooking, whisk the eggs in a bowl, adding salt and pepper to taste.
  4. Pour the seasoned eggs into the pan with the caramelized onions. Scramble the mixture until the eggs are fully cooked through, which should take about 2-3 minutes.
  5. Sprinkle shredded cheddar cheese over the eggs. Allow it to melt into the warm mixture.
  6. Warm the whole wheat tortilla in a dry pan for about 30 seconds on each side.
  7. Place the egg and onion mixture onto the warm tortilla.
  8. Roll the tortilla into a burrito shape, folding in the ends as you go. Serve immediately.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat in the microwave or in a pan for a crunchy finish.
