Light and fluffy biscuits made with Greek yogurt for a protein boost, perfect for breakfast or as a snack.

  • 2 cups self-rising flour
  • 1.5 cups non-fat plain Greek yogurt
  • 1 tbsp unsalted butter, melted
  • 1 pinch salt (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix the ingredients: In a large mixing bowl, stir together the self-rising flour and Greek yogurt until you have a shaggy dough.
  3. Knead the dough: Turn the dough onto a lightly floured surface and knead gently 4-5 times until it’s nice and smooth. Be cautious not to overwork it!
  4. Shape the biscuits: Pat the dough to about a 1-inch thickness. Cut out 6 biscuits using a biscuit cutter or a round glass.
  5. Prepare for baking: Arrange the biscuits on your prepared baking sheet so they are just touching, then brush the tops with melted butter.
  6. Bake: Place them in the oven and bake for 12–15 minutes, or until they turn golden brown and are well risen.
  7. Cool before serving: Let them cool for about 5 minutes before serving warm.

Notes

For variations, consider adding herbs or cheese to the dough. Store leftovers in an airtight container.
