1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
1 tablespoon olive oil
Salt and black pepper to taste
1/2 cup honey
1/4 cup soy sauce (low sodium preferred)
2 cloves garlic, minced
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
1/2 teaspoon red pepper flakes (optional)
1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)

Instructions
Season the chicken pieces generously with salt and black pepper.
Heat the olive oil in a skillet over medium-high heat.
Add the seasoned chicken to the skillet and cook for about 5-7 minutes, or until the chicken is nicely browned. Set it aside on a plate.
Lower the heat to medium and combine the honey, soy sauce, minced garlic, rice vinegar, grated ginger, and red pepper flakes (if using) in the same skillet.
