  • 1/2 cup cottage cheese
  • 1/2 cup chopped vegetables (spinach, bell peppers, etc.)
  • 1/2 cup shredded cheese (cheddar, mozzarella, etc.)
  • Salt to taste

Instructions

  1. Preheat your air fryer to 300°F (150°C).
  2. In a medium bowl, whisk together the eggs, cottage cheese, salt, and pepper until smooth.
  3. Stir in the chopped vegetables and shredded cheese until everything is evenly mixed.
  4. Pour the mixture into silicone muffin cups or an egg bite mold, filling each about 3/4 full.
  5. Carefully place the molds in the air fryer and cook for 12-15 minutes, or until the egg bites are set.
  6. Let cool for a few minutes. Gently remove them from the molds and enjoy!
