A family favorite featuring succulent chicken breasts, crispy bacon, and gooey cheese, making it a quick and satisfying dinner option.

Ingredients

  • 4 chicken breasts (horizontally sliced in half)
  • 6 slices of cooked bacon
  • 2 cups Monterey Jack cheese
  • 1/3 cup mayo
  • 1 Tbsp honey
  • 2 tsp stone-ground mustard

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper and arrange the halved chicken breasts on it.
  3. Mix together the mayo, honey, and stone-ground mustard until smooth in a small bowl.
  4. Spread this mixture evenly over the chicken breasts.
  5. Top with the cooked bacon slices, then layer on the Monterey Jack cheese.
  6. Bake in the oven for about 30 minutes or until the chicken is fully cooked and the cheese is melted and bubbling.
  7. Let it cool for a few minutes before serving.

Notes

Use a meat thermometer to check for an internal temperature of 165°F (75°C) to avoid dryness. Feel free to experiment with different cheeses or add vegetables.
