A delightful twist on classic pancakes featuring sweet apples and creamy yogurt, perfect for breakfast any day of the week.

  • 1 cup all-purpose flour
  • 1/2 cup plain yogurt (Greek or regular)
  • 1 cup milk
  • 1 large apple, grated (preferably a sweet variety like Fuji or Honeycrisp)
  • 1 large egg
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil (plus more for cooking)
  • Optional: Chopped nuts or raisins

Instructions

  1. In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
  2. In another bowl, mix the yogurt, milk, egg, sugar, and vegetable oil until smooth.
  3. Stir the grated apple into the wet mixture.
  4. Gradually combine the wet mixture with the dry ingredients, stirring gently until just mixed.
  5. Preheat your non-stick skillet or griddle over medium heat and lightly coat with vegetable oil.
  6. For each pancake, pour 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
  7. Flip the pancakes and cook for another 2-3 minutes until golden brown.
  8. Keep pancakes warm in a low oven while cooking the remaining batter.
  9. Serve warm with maple syrup or your favorite toppings.

Notes

For extra flavor, add a splash of vanilla extract or a pinch of nutmeg to the batter. Serve with maple syrup or fresh fruit.
