Bacon Egg Bites are the ultimate customizable breakfast treat, perfect for meal prepping or a quick morning option.

Ingredients

  • 6 large eggs
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup cooked bacon, chopped
  • 1/4 cup milk
  • Salt and pepper to taste
  • Optional: diced vegetables (bell peppers, onions, spinach)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with cooking spray.
  2. In a mixing bowl, whisk the eggs, milk, salt, and pepper until well blended.
  3. Stir in the shredded cheese and chopped bacon. If you’re adding vegetables, toss them in now.
  4. Pour the mixture into the muffin tin, filling each cup about three-quarters full.
  5. Bake for 20-25 minutes until the egg bites are set and golden on top.
  6. Allow them to cool for a few minutes before removing them from the muffin tin. Enjoy warm or store for later.

Notes

Best served warm with a side of fruit salad or crispy hash browns.
