Bacon Egg Cheese Breakfast Quesadillas

A delightful handheld breakfast combining crispy bacon, fluffy scrambled eggs, and gooey cheddar cheese encased in warm tortillas.

Ingredients

  • 4 large flour tortillas
  • 6 slices of bacon
  • 4 large eggs
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 tablespoon butter
  • Optional: hot sauce, chopped green onions, or fresh cilantro for garnish

Instructions

  1. Heat a large skillet over medium heat.
  2. Cook the bacon until crispy, about 5–7 minutes. Drain and crumble it.
  3. In a medium bowl, whisk together eggs with a pinch of salt and pepper.
  4. Melt butter in the same skillet over medium heat and scramble the eggs until just set, about 2 minutes.
  5. Lay a tortilla flat and add a fourth of the cheese, some scrambled eggs, and crumbled bacon to one half.
  6. Fold the tortilla over to create a half-moon shape.
  7. Cook the quesadilla in the skillet for 2–3 minutes on each side until golden brown and the cheese is melted.
  8. Allow to cool slightly, cut into sections, garnish with optional toppings before serving.

Notes

For extra flavor, add smoked paprika or herbs to the eggs. Feel free to swap bacon with turkey bacon or veggies for a vegetarian version.
