Bacon, Egg, and Cheese Breakfast Quesadillas

Quick and easy breakfast quesadillas filled with bacon, eggs, and cheese, perfect for busy mornings.

Ingredients

  • 1 (8-inch) flour tortilla
  • 2 slices cooked bacon, chopped
  • 2 large eggs
  • 1/3 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • 1 teaspoon butter (optional)

Instructions

  1. In a small bowl, whisk the eggs with salt and pepper until well combined.
  2. Heat a nonstick frying pan over medium-low heat. Optional: Add butter.
  3. Pour the whisked eggs into the pan, swirling to cover evenly. Cook until the edges set, keeping the center slightly soft.
  4. Sprinkle half of the cooked bacon and half of the shredded cheese over the eggs.
  5. Place the tortilla on top, pressing down gently.
  6. Carefully flip the eggs and tortilla together, keeping the tortilla on the bottom.
  7. Add the remaining bacon and cheese on top, then fold the tortilla in half.
  8. Cook for 1-2 minutes on each side until golden brown and melted.
  9. Remove from the pan, slice into wedges, and serve warm.

Notes

Best served with salsa, guacamole, or sour cream. Store leftovers in an airtight container for up to three days.
