A quick and delightful frittata that combines bacon and potatoes, perfect for any meal.

  • 6 large eggs
  • 1/2 cup milk
  • 2 medium potatoes, peeled and diced
  • 4 slices of bacon, chopped
  • 1/2 cup onion, chopped
  • Salt and pepper, to taste
  • 1 cup shredded cheese (optional)
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the bacon in a large skillet over medium heat until crispy. Remove the bacon, leaving the drippings in the pan.
  3. Add the potatoes and chopped onions to the skillet and sauté until the potatoes are tender, about 5-7 minutes.
  4. Whisk together the eggs, milk, salt, and pepper in a bowl until well combined.
  5. Fold the cooked potatoes, onions, and bacon into the egg mixture.
  6. Pour this mixture back into the skillet and allow it to cook on the stovetop until the edges start to set.
  7. Sprinkle cheese on top if using, then transfer the skillet to the oven and bake for 15-20 minutes, or until fully set in the center.
  8. Let the frittata cool slightly before slicing into wedges. Garnish with fresh herbs if desired before serving.

Notes

For a healthier option, consider using turkey bacon or different types of cheese.
