A nourishing treat combining blueberries and cottage cheese, perfect for breakfast or dessert.

Ingredients

  • 1 cup cottage cheese
  • 2 cups blueberries
  • 1/2 cup oats
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup honey or maple syrup
  • 1/2 tsp baking powder
  • Salt to taste
  • Your favorite toppings (e.g., nuts, additional fruit)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine cottage cheese, blueberries, oats, eggs, vanilla extract, honey (or maple syrup), baking powder, and a pinch of salt in a blender. Blend until smooth and well combined.
  3. Pour the mixture into greased muffin tins or ramekins, filling each about three-quarters full.
  4. Bake for 25-30 minutes or until set and the tops are lightly golden.
  5. Let cool slightly, then add your favorite toppings and enjoy warm!

Notes

For best results, blend ingredients well for a smooth texture. You can also use frozen blueberries; just bake them a bit longer if still frozen.
