A delightful way to start your day, combining scrambled eggs, crispy bacon, and melted cheese in warm tortillas.

Ingredients

  • 8 small flour tortillas
  • 6 large eggs
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • 1 tbsp butter or bacon grease

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, then crumble and set aside.
  2. Whisk the eggs with salt and pepper in a mixing bowl and scramble them in the same skillet.
  3. Warm the tortillas until pliable.
  4. Arrange the tortillas in a baking dish to form taco shells.
  5. Fill each tortilla with scrambled eggs, cheese, crumbled bacon, and green onions.
  6. Bake in a preheated oven at 375°F (190°C) for about 10 minutes, or until the cheese is melted.
  7. Rest the tacos for 1 minute before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the oven or microwave.
