6 small boneless skinless chicken thighs
Salt and black pepper to taste
2 Tbsp salted butter, divided
6 garlic cloves, minced
3 Tbsp honey
2 Tbsp low sodium soy sauce
1/2 tsp ground thyme
1/2 tsp ground ginger
Instructions
Preheat your oven to 400°F (200°C).
Pat the chicken thighs dry using paper towels and season both sides with salt and black pepper.
In an oven-safe skillet, heat 1 tablespoon of butter over medium-high heat and sear the chicken thighs for 4 to 5 minutes on each side until golden brown. Remove and set aside.
Reduce heat to medium, add the remaining tablespoon of butter to the skillet, and sauté the minced garlic for about 1 minute until fragrant.
Whisk in the honey, soy sauce, thyme, and ginger until well combined and smooth.
Return the seared chicken to the skillet, spoon the sauce over the top, and bake in the preheated oven for 20 to 25 minutes or until the chicken is cooked through.
Serve garnished with fresh parsley.
Notes
For a vegan version, swap honey for maple syrup or use tahini for a nutty twist. Serve with rice or steamed vegetables.
