A delightful dish featuring tender dark meat chicken in a creamy lemon butter sauce, perfect for special occasions and cozy dinners.

  • 10 dark meat chicken pieces (drumsticks and thighs, trimmed of excess fat)
  • 2 tsp kosher salt
  • 1 tbsp smoked paprika
  • 1 tbsp Montreal chicken seasoning blend (or any chicken seasoning)
  • 2 tbsp butter
  • 1/2 cup red onion (minced)
  • 1/2 cup flat leaf parsley (chopped)
  • 1 tbsp garlic (minced)
  • 1/2 tsp red pepper flakes
  • 1 cup chicken stock
  • 1 tbsp fresh lemon juice
  • 1 cup freshly grated Parmesan cheese
  • 1/3 cup heavy whipping cream

Instructions

  1. In a skillet, melt the butter over medium heat.
  2. Add the minced red onion and sauté for about 2 minutes until it softens.
  3. Incorporate the chopped parsley and garlic, stirring well, then add the lemon juice and red pepper flakes.
  4. Pour in the chicken stock and mix in the Parmesan cheese until well combined. Add the heavy cream and let it simmer for 1 minute.
  5. Season the chicken pieces with kosher salt, smoked paprika, and chicken seasoning.
  6. Pour the creamy sauce evenly over the chicken in a baking dish, ensuring each piece is well coated.
  7. Bake uncovered at 375°F for 105 minutes, flipping the chicken halfway through cooking.
  8. For a golden finish, broil the chicken skin-side up until beautifully crisp, basting with the sauce before serving.

Notes

For extra flavor, marinate the chicken in the seasonings for at least an hour. Don’t skip the broiling step for crispier skin. Substitute Greek yogurt for a healthier twist.
