  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Add the oats, maple syrup (if using), baking powder, baking soda, salt, and cinnamon to the mashed bananas. Mix until well combined.
  4. Pour in the milk, vegetable oil, and vanilla extract. Stir until the batter is smooth.
  5. Fold in your choice of chocolate chips or blueberries if desired.
  6. Evenly distribute the batter among the muffin cups, filling each about two-thirds full.
  7. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
