Ingredients

  • 1 cup rolled oats
  • 1 cup milk (or plant-based milk)
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Cooking spray or oil for the pan

Instructions

  1. Begin by placing the ripe banana, rolled oats, milk, eggs, baking powder, cinnamon, and salt into a blender. Blend until you achieve a smooth consistency.
  2. Preheat a non-stick skillet over medium heat and lightly coat it with cooking spray or oil.
  3. Pour about 1/4 cup of the batter onto the skillet for each pancake.
  4. Cook for 2-3 minutes, keeping an eye out for bubbles forming on top. Once you see those bubbles, flip the pancakes and cook for an additional 1-2 minutes until golden brown.
  5. Serve the pancakes warm with your favorite toppings such as maple syrup, fresh fruit, or yogurt.
