  • 4 medium golden potatoes (or sweet potatoes)
  • 2 tablespoons olive oil (or avocado oil)
  • 4 slices bacon
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Old Bay seasoning
  • 2 cloves garlic (minced)
  • 2 tablespoons pure maple syrup
  • 1 tablespoon parsley (or chives, chopped)

Instructions

  1. In a large skillet over medium heat, cook the bacon until crispy. Remove and set aside, leaving drippings in the pan.
  2. Cut the potatoes into bite-sized chunks.
  3. Drizzle olive oil into the skillet and increase heat to medium-high.
  4. Once hot, add potato chunks. Season with salt, pepper, and Old Bay seasoning.
  5. Cook for 10-15 minutes, stirring occasionally until golden brown and tender.
  6. As potatoes near completion, add minced garlic and cook for 1-2 minutes until fragrant.
  7. Crumble cooked bacon over potatoes and drizzle with maple syrup before serving.
  8. Finish by sprinkling chopped parsley or chives on top before enjoying!

Notes

Can be served solo or as a side with eggs. For a twist, use sweet potatoes or turkey bacon.
