BBQ Chicken Grilled Cheese Sandwich

A delightful twist on a classic comfort food, combining crispy bread with tender, tangy BBQ chicken and melty cheese.

Ingredients

  • 2 slices of bread (sourdough, whole wheat, etc.)
  • 1 cup shredded BBQ chicken
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 2 tablespoons butter
  • BBQ sauce for drizzling (optional)
  • Pickles (optional for serving)

Instructions

  1. If you have cooked BBQ chicken ready, you’re halfway there! If not, sauté chicken in BBQ sauce in a pan until fully cooked. Then shred it with forks.
  2. Spread butter on one side of each slice of bread. On the unbuttered side, pile on a generous amount of shredded BBQ chicken and top with cheese.
  3. Heat a skillet over medium heat. Gently place the sandwich, buttered-side down, onto the skillet.
  4. Cook until the bread is golden brown, about 3 to 4 minutes.
  5. Carefully flip the sandwich and cook the other side until the cheese is melted and the bread is golden, another 3 to 4 minutes.
  6. Once golden brown and bubbly, take it off the heat. Cut in half and drizzle with BBQ sauce. Add pickles if desired.

Notes

For an extra crispy sandwich, brush the outer sides of the bread with olive oil in addition to butter. Experiment with different cheeses for varied textures.
