A delightful fusion of smoky BBQ chicken, fresh greens, and vibrant toppings, perfect for weeknight dinners or gatherings.

  • 2 cups cooked chicken, shredded
  • 4 cups mixed greens
  • 1 cup corn
  • 1 cup black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup BBQ sauce
  • 1/2 cup ranch dressing
  • 1/2 cup shredded cheese
  • 1 avocado, diced
  • Salt and pepper to taste

Instructions

  1. Combine the shredded chicken, corn, black beans, and halved cherry tomatoes in a large bowl.
  2. Drizzle the BBQ sauce over the mixture and toss everything to coat evenly.
  3. Mix the ranch dressing with the mixed greens until they are well-coated in another bowl.
  4. Layer the BBQ chicken mixture on top of the dressed greens for an even distribution.
  5. Sprinkle chopped avocado and shredded cheese over the top.
  6. Add salt and pepper to taste, giving it a quick toss if desired.
  7. Serve immediately for best flavor, or chill it for a few minutes to enhance the taste.
