  • ⅔ cup olive oil
  • ⅔ cup less sodium soy sauce
  • 1 lemon (juiced)
  • 1 tablespoon brown sugar
  • 2 tablespoons spicy brown mustard
  • 1 teaspoon fresh ground black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon liquid smoke flavoring
  • 1 teaspoon chili garlic sauce (optional)
  • 2 to 3 pounds assorted chicken pieces

Instructions

  1. Combine all marinade ingredients in a small mixing bowl: olive oil, soy sauce, lemon juice, brown sugar, spicy brown mustard, black pepper, garlic powder, liquid smoke, and optionally, chili garlic sauce. Whisk until well blended.
  2. Place your chicken pieces into a gallon-sized plastic storage bag.
  3. Pour the marinade over the chicken, ensuring each piece is well coated.
  4. Seal the bags tightly and turn them to coat all chicken pieces evenly.
  5. Refrigerate for at least 1 hour, but for best flavor, marinate for up to 8 hours.
  6. Preheat your grill to medium-high heat.
  7. Remove the chicken from the marinade and discard the marinade.
  8. Grill the chicken for about 6-8 minutes per side, until cooked through.

Notes

For the best flavor, consider marinating overnight. Use a meat thermometer to ensure chicken reaches 165°F (75°C) for safe eating.
