A delightful dish that perfectly encapsulates the flavors of the islands with tender chicken thighs marinated in a sweet and tangy sauce.

Ingredients

Scale
  • 4 Chicken thighs
  • 1/2 cup Soy sauce
  • 1 tablespoon Ginger, minced
  • 3 cloves Garlic, minced
  • 1/4 cup Brown sugar
  • 1/2 cup Pineapple juice
  • 2 Green onions, chopped (for garnish)
  • Rice (for serving)
  • Salad or grilled pineapple (for serving)

Instructions

  1. Combine soy sauce, ginger, garlic, brown sugar, and pineapple juice in a bowl to make the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and let soak for at least 30 minutes or longer.
  3. Preheat your grill to medium-high heat.
  4. Place the marinated chicken thighs on the grill once hot. Cook each side for about 6-8 minutes, until fully cooked (internal temperature should reach 165°F).
  5. Remove the chicken from the grill and let it rest for a minute before serving. Pair with rice, salad, or grilled pineapple.

Notes

For richer flavor, consider marinating the chicken for a few hours or overnight. You can swap chicken thighs with boneless chicken breasts if preferred.
