Better Than Starbucks Egg Bites

Delicious and customizable egg bites perfect for busy mornings or leisurely brunches, better than the expensive versions at Starbucks.

Ingredients

  • 10 eggs
  • 1/2 cup milk or cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped vegetables (bell peppers, tomatoes, onions)
  • 1/2 cup cooked crumbled bacon or sausage (optional)
  • 1/2 cup chopped turkey (optional)
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Generously spray a muffin tin with non-stick cooking spray.
  3. Chop your chosen vegetables. If using bacon, ensure it’s cooked and chopped into bite-sized pieces.
  4. In a medium mixing bowl, whisk together the eggs, milk or cream, salt, and pepper until well blended.
  5. Distribute a handful of chopped veggies, meat, and a sprinkle of cheese into each muffin cavity.
  6. Carefully pour the egg mixture into the muffin tin, filling each cavity about three-quarters full.
  7. Gently stir in each muffin cavity for even distribution.
  8. Bake for about 12-18 minutes, or until the egg bites are set and slightly golden on top.
  9. Let them cool for a few minutes before carefully removing them from the tin. Serve warm.

Notes

Leftover egg bites can be stored in an airtight container in the refrigerator for up to 4 days. They freeze well for about three months. Reheat in the microwave for about 30-60 seconds.
