A quick and flavorful dish featuring chicken thighs marinated in soy sauce and grilled to perfection with garlic butter.

  • 6 boneless, skinless chicken thighs
  • 1/4 cup soy sauce
  • 2 tablespoons soy sauce (divided)
  • 2 tablespoons butter
  • 2 teaspoons garlic (minced)
  • Extra virgin olive oil
  • Kosher salt
  • Ground black pepper

Instructions

  1. Marinate Chicken: In a glass bowl, combine the chicken thighs with 1/4 cup of soy sauce. Toss well to coat and then set aside.
  2. Mix Garlic Butter: In a small bowl, mix together 2 tablespoons of butter and 2 teaspoons of minced garlic. Set it aside for later use.
  3. Preheat your flat-top grill over medium-high heat. Drizzle a tablespoon of olive oil on the cooking surface.
  4. Grill the marinated chicken thighs on the grill and season with kosher salt and ground black pepper. Grill for about 2-3 minutes.
  5. Drizzle soy sauce over the chicken and add one tablespoon of the garlic butter mixture. Close the lid and cook for another 1-2 minutes.
  6. Flip the chicken thighs, season again, and add the remaining tablespoon of garlic butter along with another drizzle of soy sauce. Continue cooking until the internal temperature reaches 162°F.
  7. Transfer the cooked chicken to a plate and allow it to rest to ensure the internal temperature rises to a safe 165°F. Slice or cut as desired.

Notes

For a gluten-free option, use tamari instead of soy sauce. You can replace the butter with olive oil for dairy-free.
