A quick and easy breakfast bake featuring creamy cottage cheese and sweet blueberries, perfect for busy mornings or brunch.

  • 1 cup cottage cheese
  • 2 eggs
  • 1/4 cup maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup oat flour
  • 1/4 teaspoon baking powder
  • 1/2 cup fresh or frozen blueberries
  • Pinch of salt
  • Butter or oil, for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a small baking dish with butter or oil.
  2. Whisk together the cottage cheese, eggs, maple syrup (or honey), vanilla extract, and cinnamon until smooth.
  3. Add in the dry ingredients: oat flour, baking powder, and a pinch of salt. Mix until well combined.
  4. Fold in the blueberries, taking care not to break them.
  5. Pour the mixture into your greased baking dish, spreading it out evenly.
  6. Bake for about 30–35 minutes, or until the center is set and the top is golden brown.
  7. Let it cool slightly before serving—delicious warm or chilled!

Notes

For variety, swap in Greek yogurt for cottage cheese or change the fruit to your preference. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
