A nutritious and delicious bake made with cottage cheese and blueberries, perfect for breakfast, snacks, or a light dessert.

  • 2 cups cottage cheese
  • 1 cup blueberries (fresh or frozen)
  • 3 eggs
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cottage cheese, eggs, honey or maple syrup, and vanilla extract. Mix everything until it’s well combined.
  3. Stir in the rolled oats, baking powder, cinnamon, and a pinch of salt. Ensure even distribution throughout the mixture.
  4. Gently fold in the blueberries, being cautious not to smash them.
  5. Pour the mixture into a greased baking dish, spreading it evenly.
  6. Bake for 30-35 minutes or until the center is set and the top turns a lovely golden brown.
  7. Allow the bake to cool slightly before serving, which lets all the flavors meld beautifully.

Notes

Serve warm or chilled; perfect topped with honey or yogurt. Store leftovers in an airtight container in the fridge for 3-5 days.
