A protein-packed, delicious breakfast bake featuring blueberries and cottage cheese that’s easy to prepare.

Ingredients

  • 2 cups cottage cheese
  • 1 cup rolled oats
  • 1 cup blueberries
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cottage cheese, rolled oats, blueberries, eggs, honey or maple syrup, vanilla extract, baking powder, cinnamon, and a pinch of salt in a large mixing bowl.
  3. Stir the mixture until everything is well blended.
  4. Pour the batter into a greased baking dish, spreading it evenly.
  5. Bake in the preheated oven for 30 to 35 minutes, or until the top is set and golden brown.
  6. Let the bake cool for a few moments before slicing and serving.

Notes
