2 cups cottage cheese (full-fat preferred for creaminess)
4 large eggs (room temperature)
1/4 cup honey or maple syrup
1 tsp vanilla extract (pure preferred)
1/2 tsp ground cinnamon
1 cup blueberries (fresh or frozen; do not thaw if frozen)
1/2 cup rolled oats (old-fashioned)
1/4 cup almond flour or all-purpose flour
2 tbsp melted butter or coconut oil
1 tbsp honey or maple syrup
1/4 tsp ground cinnamon
Instructions
Preheat your oven to 375°F (190°C) and grease an 8×8-inch baking dish.
Combine the cottage cheese, eggs, honey or maple syrup, vanilla extract, and 1/2 tsp ground cinnamon in a blender. Blend until smooth and custard-like.
Fold in the blueberries gently, making sure they stay intact.
Pour the mixture into the prepared baking dish and smooth it out evenly.
Combine the rolled oats, almond flour (or all-purpose flour), melted butter (or coconut oil), remaining 1 tbsp of honey or maple syrup, and 1/4 tsp ground cinnamon in a separate bowl. Mix until crumbly.
Sprinkle the crumbly topping evenly over the base mixture.
Bake for 35–40 minutes or until the top is golden and the center feels just set.
Allow the bake to cool for about 10 minutes before slicing. Enjoy it warm or chilled.

Best served warm with Greek yogurt or a drizzle of honey or maple syrup. Pairs well with fresh fruit or nuts for added crunch.
