  • 1 cup blueberries (fresh or frozen)
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the cottage cheese, sugar, vegetable oil, eggs, and vanilla extract in a mixing bowl. Mix well until smooth.
  3. Whisk together the all-purpose flour, baking powder, baking soda, and salt in a separate bowl.
  4. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  5. Fold in the blueberries using a spatula or wooden spoon, being careful not to overmix.
  6. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool the muffins in the pan for a few minutes before transferring them to a wire rack. Serve warm or at room temperature.
