Delicious bite-sized pancake bites with sweet blueberries and zesty lemon, perfect for busy mornings or family gatherings.

Ingredients

  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1 cup blueberries
  • Lemon juice for serving

Instructions

  1. In a medium bowl, combine the flour, sugar, baking powder, and salt until evenly mixed.
  2. Set the blueberries aside for later and zest your lemon.
  3. In another bowl, whisk together the milk, egg, melted butter, vanilla extract, and lemon zest until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined, avoiding over-mixing.
  5. Fold the blueberries into the batter gently.
  6. Preheat a griddle or non-stick skillet over medium heat and lightly grease it.
  7. Drop small amounts of the batter onto the skillet using a tablespoon.
  8. Cook until the edges are set and bubbles form on the surface, about 2-3 minutes per side.
  9. Transfer the pancake bites to a plate and serve warm with a drizzle of lemon juice or syrup.

Notes

Store leftover pancake bites in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or skillet.
