A quick and nutritious breakfast that combines the delightful flavors of blueberry pie with the ease of overnight oats.

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup Greek yogurt (or a dairy-free alternative)
  • 1 cup milk (dairy or plant-based)
  • 2 tablespoons maple syrup or honey
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Chopped nuts (optional, for topping)

Instructions

  1. Combine the rolled oats, milk, and yogurt in a medium bowl.
  2. Stir in the maple syrup, vanilla extract, and cinnamon until everything is well mixed.
  3. Fold in the blueberries, saving a few for topping later.
  4. Cover the mixture tightly and refrigerate overnight (or at least 4-6 hours).
  5. In the morning, give your oats a good stir. If they’re too thick for your liking, add a splash more milk.
  6. Serve in bowls, topped with the remaining blueberries and a sprinkle of nuts, if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat with a splash of milk if desired.
