A delightful breakfast featuring thick slices of brioche stuffed with a creamy bacon filling, drizzled in bourbon-infused maple syrup.

  • 8 slices brioche or challah bread, cut thick
  • 6 slices thick-cut bacon
  • 4 large eggs
  • 1/2 cup whole milk
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 2 ounces cream cheese, softened
  • 1 cup pure maple syrup
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • Pinch fine salt

Instructions

  1. Preheat your oven to 400°F (200°C). Arrange the bacon on a wire rack set above a baking tray, bake for about 15 minutes until crispy. Transfer to paper towels to drain and chop finely.
  2. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon.
  3. Mix cream cheese with the finely chopped bacon in a separate bowl until smooth.
  4. Create pockets in each slice of bread and fill with the bacon-cream cheese mixture, sealing well.
  5. Dip each stuffed slice into the egg custard, ensuring a thorough coating.
  6. In a skillet, heat butter over medium heat. Cook the stuffed slices for 3-4 minutes on each side until golden brown.
  7. Warm the maple syrup in a saucepan with bourbon, vanilla extract, and salt over low heat for about 2 minutes.
  8. Serve immediately, drenching the French toast in the warm bourbon maple glaze.

Notes

Try substituting bacon with pancetta or turkey bacon for a different flavor. For a kid-friendly version, omit the bourbon.
